These quick & easy Air Fryer Sweet Potato Cubes are an easy side dish or healthy snack ready in 15 minutes! They're so tender with just the right ratio of seasonings to add flavor without overpowering the natural sweetness of the potato.

As a dietitian, I'll take any chance to prepare nutritious recipes in my air fryer. Sweet potatoes are a source of dietary fiber for a healthy gut, and they provide other important vitamins and minerals like vitamins A & C and potassium. Skip the sweet potato fries or sweet potato wedges and make savory sweet potatoes in cubes instead!
Some of my favorite ways to eat these sweet potato chunks are in a Nourish Bowl with Roasted Chickpeas & Tahini Dressing, in a Kale Harvest Salad with chicken breasts, or mixed in with my scrambled eggs when I'm feeling like having breakfast for dinner. I hope you love these Air Fryer Sweet Potato Cubes as much as I do! 😊

Key Ingredient Notes and Substitutions
This Sweet Potato Cubes Recipe is made with simple ingredients. Below are some ingredient notes. Check the recipe card for exact ingredient measurements.
- Sweet Potato - there are hundreds of sweet potato varieties! I use a jewel variety of sweet potato which has orange flesh and is a go-to for baking or roasting. An easy way to select a good sweet potato at the grocery store is to choose ones that are firm. Store your sweet potatoes in a dry place. According to the US Sweet Potato Council, storing them in the fridge can give them an unpleasant taste.
- Extra Virgin Olive Oil - extra virgin olive oil is olive oil in its purest form (least processed) so it retains all the antioxidants and nutrients from the olive itself. Olive oil is high in oleic acid, a monounsaturated fat that can reduce inflammation and has been shown to improve brain health. In this recipe, it helps to keep the sweet potatoes from drying out. If you prefer a more mild flavor, you can use avocado oil or your favorite cooking oil instead.
- Spices - we use a combination of garlic powder, paprika, and salt and black pepper to add just the right amount of seasonings.
How to Make Air Fryer Roasted Sweet Potatoes
Below are some visuals how to make air fryer sweet potato cubes. The full recipe is on the recipe card at the bottom of the post.
Step 1 - Wash and peel your sweet potatoes. On a cutting board, use a sharp knife to cut them into 1 inch cubes
Step 2 - In a large bowl, combine the sweet potato cubes with the olive oil and spices until well coated.
Step 3 - Preheat your air fryer to
400℉ (200°C) for a couple of minutes. Add your sweet potato cubes to the air fryer basket in a single layer.
Step 4 - Air fry for 10-12 minutes, giving them a good shake about 5 minutes through. Cook time may vary slightly depending on your air fryer. I top mine with tahini and parsley.
Hint: you may need to cook the sweet potatoes in batches. Spreading them in a single layer allows the air fryer to circulate hot air.
Variations
The best part about making air fryer sweet potato cubes at home is you can customize the seasoning to your liking! Below are some ideas, but feel free to get creative!
- Spicy - make it spicy with some chili powder, red pepper flakes, or cayenne pepper.
- Sweet - add sweetness with honey or maple syrup, brown sugar, and cinnamon or pumpkin pie spice.
- Zesty - use a squeeze of fresh lemon and thyme to brighten things up!
Storage
- Refrigerator - store leftovers in an airtight container in the fridge for up to 3-4 days.
Expert Tips
- Air fry in a single layer. You may need to do them in batches depending on the size of your air fryer.
- Shake the sweet potato cubes at the halfway mark, around 5 minutes.
- Keep an eye on them in the last couple minutes of cooking because they can quickly go from cooked to burned!
FAQ
While healthy means something different to everyone, these sweet potato cubes are a nutrient-rich option. Sweet potatoes provide dietary fiber for a healthy gut and also contain antioxidants, vitamins A & C, potassium, and manganese. The extra-virgin olive oil provides heart-healthy fats that also support hormone health and brain health.
Absolutely! If you don't have an air fryer or don't feel like air frying, make them in the oven. Spread them in an even layer on a baking sheet lined with parchment paper and sprayed with cooking spray. Roast in the oven at
400℉ (200°C) for 20-25 minutes.
For sure! If using frozen, air fry them for 5 minutes at 390℉ or 400℉ to let them thaw. Then transfer them to a bowl, add the oil and spices and cook them for 10-12 more minutes in the air fryer.

Thank you for this simple recipe!!! I just bought an air fryer on black friday and I'm loving trying new recipes...especially when my toddler will eat them too. This was so easy and I love the tip about doing more than one batch because I couldn't get them to be crispy but I tried doing the single layer and a couple batches and it worked like a charm! Thanks Mal!
