Key Ingredient Notes and Substitutions
These homemade Chicken Sausage patties are made with simple ingredients. Below is the ingredient list with some notes.Be sure to check the printable recipe card at the bottom for exact ingredient measurements and full recipe.
- Ground Chicken - I like to use ground chicken breast for my breakfast patties because it is more lean than ground pork. With that said, you can turn these into pork sausage patties by replacing the lean chicken breast with ground pork. Ground turkey works too.
- Pure Maple Syrup - a bit of sugar adds sweetness to balance out the savory spices & herbs added to this sausage. It also helps with browning of the patties. You can use brown sugar for this purpose if you prefer. If you don't like sweetness in your breakfast sausage, feel free to leave it out!
- Blend of Seasonings - you'll use a handful of spices to add savory flavor including dried thyme, parsley, oregano, garlic powder, onion powder, and crushed red pepper flakes. Make this recipe even easier by replacing the thyme/parsley/oregano combo with Italian seasoning. Another very common ingredient found in breakfast sausage patties is dried sage or fresh sage. Feel free to add it if you want!
- Kosher Salt & Black Pepper - my favorite way to tie the flavors together.
- Extra-Virgin Olive Oil - or avocado oil - you'll use the oil to cook the sausage patties. Both olive oil and avocado oil are high in heart healthy oleic acids.
- Apple (optional) - to add a bit more sweetness, grate part of an apple. This also adds more nutrients and makes for a more moist end product.
How to Make Chicken Breakfast Sausage
Below are the easy steps for how to make this chicken apple sausage with some visuals that I hope are helpful! Don't forget to check out the recipe card at the bottom for the full recipe.
- Step 1: Grate the apple until you have ¼ cup. Add the ground chicken, seasonings, apple, and pure maple syrup to a large bowl. Mix to combine. You can do this with your hands or a wooden spoon.
- Step 2: Divide the chicken into equal sized pieces and gently form it into patties that are ½ inch to ¾ inch thick. Line them up on a baking sheet lined with parchment paper to get them ready to cook. You will have 8-10 patties.
- Step 3: Heat a large nonstick skillet on medium heat. Add the olive oil and heat until it shimmers. Add the first batch of chicken patties to the hot skillet in a single layer. Be sure not to overcrowd the pan. You will likely need to cook a second batch. Cook 4-5 minutes on the first side.
- Step 4: Carefully flip the patties and cook and cook an additional 4-6 minutes on the second side or until they are golden brown and reach an internal temperature of 165℉ (75°C) when measured with a meat thermometer.
Hint: keep an eye on them to avoid overcooking! The cook time will vary depending on your pan and stovetop.

While store-bought frozen sausage has its place in my kitchen, I prefer to make my own when I can spare a few minutes! Homemade sausage patties give you more control over the flavor so you can adjust them to your personal preferences. Another benefit of making your breakfast chicken sausage at home is that it's made with minimal ingredients and don't contain additives or preservatives that many store-bought versions do.
Variations
One of the great things about making homemade chicken breakfast sausage patties is you can adjust the flavors to your liking. Below are some ideas but feel free to get creative!
- Spicy - if you like spicy sausage patties, double up on the red pepper flakes or add a dash of cayenne.
- Savory - replace the grated apple with grated zucchini for a more savory option. Zucchini is the perfect addition to get some veggies in at breakfast too!
- Kid friendly - if you're serving this breakfast recipe to kids, I suggest omitting the red pepper flakes to take away the spiciness.
