These homemade Chicken Breakfast Sausages are so easy to make, the perfect balance of savory & sweet, and a great addition to your breakfast plate next time you're looking to add protein!
Grate the apple until you have ¼ cup. Add the ground chicken, seasonings, apple, and pure maple syrup to a large bowl. Mix to combine. You can do this with your hands or a wooden spoon.
Divide the chicken into equal sized pieces and gently form it into patties that are ½ inch to ¾ inch thick. Line them up on a baking sheet lined with parchment paper to get them ready to cook. You will have 8-10 patties.
Heat a large nonstick skillet on medium heat. Add the olive oil and heat until it shimmers. Add the first batch of chicken patties to the hot skillet in a single layer. Be sure not to overcrowd the pan. You will likely need to cook a second batch. Cook 4-5 minutes on the first side.
Carefully flip the patties and cook and cook an additional 4-6 minutes on the second side or until they are golden brown and reach an internal temperature of 165℉ (75°C). Cook time will vary depending on your pan and stovetop.

Expert Tips
Use a cookie scoop or small measuring cup to create evenly sized patties. I suggest rolling them into balls and them mashing them gently with your hands to create patties.
Be sure to heat the oil in the pan before adding the patties. Adding them to the hot pan will create more browning.
Don't overcook them because they will get tough and dry. To avoid overcooking, don't raise the heat on your stove above medium heat.
Use a meat thermometer to measure the internal temperature to make sure they are cooked!
Storage
Refrigerator - store leftovers in an airtight container in the fridge for 3-4 days.
Freezer - meal prep these by making them in advance and freezing in an airtight container in the freezer for up to 2 months.
Reheat - To reheat your refrigerated chicken breakfast sausage, microwave for 45 seconds to 1 minute or heat in your air fryer or toaster oven. To reheat leftover frozen patties, microwave for 1-2 minutes until heated throughout.
