As a dietitian, I'm a big fan of healthy breakfast recipes! And one of my favorite ways to ensure I get a nourishing breakfast at the start of the day is to have something I look forward to in the morning.
This quick avocado toast is a balanced breakfast and one of my favorites when I don't have much time. It even makes a great snack! Just combine a few ingredients and add everything on top of your favorite bread and you're good to go.
A lot of avocado toast recipes include a hard-boiled egg. If you are looking for that, try my Smashed Avocado Toast. This one is made without eggs for something a little different!
If you're looking for more high protein breakfast options, make my Cottage Cheese Egg Bake or Kale and Mushroom Egg Bites. And if you have leftover sourdough bread after making this Avocado Cottage Cheese toast, use it to make Sourdough Croutons!

Key Ingredient Notes and Substitutions
This Cottage Cheese Avocado Toast recipe is made with a handful of ingredients. Here's some ingredient notes, but be sure to check the printable recipe card for the complete list of ingredients.
- Fresh Avocado - use a perfectly ripe avocado for best results. According to the Hass Avocado Board, you can tell if your avocado is ripe if it yields to gentle pressure. It shouldn't be mushy, but not hard either! So give it a gentle squeeze and if it feels lightly soft, it's ready to use. Good avocados are key to making the even the best plain avocado toast recipe.
- Cottage Cheese - cottage cheese is a good source of protein and also adds some calcium and extra flavor to this recipe. It makes for a delicious avocado toast! I like the texture and consistency of Good Culture brand of cottage cheese if you can find it. If you don't like the flavor or texture of cottage cheese, feel free to substitute it with Greek yogurt.
- Sourdough Bread - in my opinion, sourdough is the best bread for this recipe because it's a sturdy bread but has a delightful chewy texture when you bite into it. You can use whole grain bread, wheat bread, rye bread, or even white bread instead. Just make sure that you use a good bread - it's a key to up-leveling any avocado or cottage cheese toast.
- Lemon Juice - a little squeeze of lemon juice adds citric acid which helps brighten the flavor and color of the avocado to give it that beautiful bright green hue. It also adds some vitamin C! If you prefer, substitute with lime juice instead.
- Dijon Mustard - a little bit of dijon is my favorite way to add some tang and spice to this avocado mixture! Feel free to leave it out if you want.
- Everything But the Bagel Seasoning - I use Everything But the Bagel Seasoning from Trader Joe's, but you can use any Everything Bagel seasoning or even make your own. If you aren't familiar with it, it's a combination of toasted sesame seeds, poppy seeds, garlic and onion flakes, and salt. Add black pepper too if you want.
- Honey or Hot Honey - this is optional for topping! Feel free to use your own favorite toppings instead. I've seen people use balsamic, sriracha, chili crunch, or a pinch of red pepper flakes.

Variations
The best part about this Cottage Cheese Avocado Toast is that there are so many different ways to customize it to your taste preferences. Below are some examples, but feel free to get creative!
- Spicy - add red chili flakes for a little kick.
- Deluxe - I tried to keep this recipe as simple as possible by not asking you to chop anything! But if you have a little time, you can add flavor by chopping fresh herbs, red onion, green onions, or cherry tomatoes adding them to the avocado mixture.
- Tomato Basil - incorporate fresh tomatoes with tomato slices and fresh basil leaves added on top of the bread! Top it with a drizzle of balsamic glaze, flaky salt, and olive oil.
- Extra Protein - amp up the protein by mashing in 1-2 hard boiled eggs with the avocado mixture like in my smashed avocado toast. Or add a fried egg on top!
Storage for Cottage Cheese Avocado Toast
- Refrigerator - store the leftover avocado mixture in the fridge in an airtight container for up to 3-4 days.
Expert Tips
- Mash the avocado first and then mix it with the other ingredients and add it to the toast. This helps give it a creamy texture and it can be hard to mash it on the toast without squishing your bread!
- Use freshly squeezed lemon juice for best results. Lemon juice from a bottle just doesn't taste quite as fresh.
- Be sure to use a ripe avocado. Check out the FAQs below for how to tell when it's good to use.
FAQ
While healthy means something different to everything, this recipe is nutrient-rich. Avocados provide heart-healthy fats that also help support hormone health and brain health. They also contain dietary fiber for a healthy gut and important nutrients like vitamin C and potassium. Cottage cheese contains protein, an important nutrient at the start of your day to help keep you full for longer.
Sourdough bread has some specific pros and can fit into a balanced eating pattern for many people. Because of the fermentation process used to make Sourdough, it has a lower glycemic index than white bread, which means it won't raise your blood sugars as quickly. It also contains prebiotics which are important nutrients for gut health. And it is lower in gluten than many other breads so people who cannot tolerate large amounts of gluten are more likely to tolerate sourdough! Pairing it with fiber-rich avocado and protein-rich cottage cheese helps slow down digestion and keeps you full longer.
This recipe has 17 grams of protein and 7 grams of fiber (using Izzio bakery Sourdough bread).
Choose a great avocado using these simple tips from Hass Avocado Board (HAB). Give it a gentle squeeze and if it is slightly soft, it is ready to use! You don't want it to be mushy and not hard, either. Ripe avocados will have a darker color but HAB recommends to go more by the feel AND color than the color alone.
