Creamy Cottage Cheese Avocado Toast (Quick Recipe)

This creamy Cottage Cheese Avocado Toast is an easy breakfast for busy mornings and such a great way to start the day! All it takes is a couple minutes - you don't even need to chop or heat anything. Just add the avocado mixture to a slice of toast & top with cottage cheese and a drizzle of honey!

Equipment

Ingredients
  

  • ½ medium avocado
  • ½ cup cottage cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Everything but the Bagel seasoning
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey optional for topping
  • 2 slices sourdough bread* or your favorite bread

Instructions
 

  • Mash the avocado half in a small bowl. Add the lemon juice, Dijon mustard, and Everything Bagel seasoning. Mix to combine.
  • Toast your bread of choice. Top each piece of toast with the avocado mixture and spread it evenly. 
  • Add the cottage cheese on top of the avocado.
  • Drizzle honey, hot honey, or balsamic glaze on top of the cottage cheese. Finish it off with an extra squeeze of lemon and Everything Bagel seasoning.

Expert Tips
  • Mash the avocado first and then add it to the toast. This helps give it a creamy texture and it can be hard to mash it on the toast without squishing your bread!
  •  Use freshly squeezed lemon juice for best results. Lemon juice from a bottle just doesn't taste quite as fresh.
  • Be sure to use a ripe avocado. 
Storage
  • Refrigerator - store the leftover avocado mixture in the fridge in an airtight container for up to 3-4 days.
