This creamy Cottage Cheese Avocado Toast is an easy breakfast for busy mornings and such a great way to start the day! All it takes is a couple minutes - you don't even need to chop or heat anything. Just add the avocado mixture to a slice of toast & top with cottage cheese and a drizzle of honey!
Mash the avocado half in a small bowl. Add the lemon juice, Dijon mustard, and Everything Bagel seasoning. Mix to combine.
Toast your bread of choice. Top each piece of toast with the avocado mixture and spread it evenly.
Add the cottage cheese on top of the avocado.
Drizzle honey, hot honey, or balsamic glaze on top of the cottage cheese. Finish it off with an extra squeeze of lemon and Everything Bagel seasoning.

Mash the avocado first and then add it to the toast. This helps give it a creamy texture and it can be hard to mash it on the toast without squishing your bread!
Use freshly squeezed lemon juice for best results. Lemon juice from a bottle just doesn't taste quite as fresh.
Be sure to use a ripe avocado.
