This Avocado Tomato Toast is perfect next time you have fresh tomatoes and are looking for simple recipes to use them up! It's a combination of creamy avocado and juicy tomatoes topped with fresh basil, a drizzle of olive oil & balsamic glaze.
As a dietitian, I'm a big fan of avocado toasts of all kinds - I even have it as a mid-day snack sometimes! This one is great for when tomatoes are in season and you're looking for easy ways to to enjoy them. Have it with a side of eggs or as a nutritious breakfast or with shredded chicken for a light lunch!

Key Ingredients and Substitution Notes
This Tomato Avocado Toast recipe is made with simple ingredients. Here's some ingredient notes, but be sure to check the printable recipe card for the full recipe.
- Fresh Avocado - use a perfectly ripe avocado for best results. According to the Hass Avocado Board, you can tell if your avocado is ripe if it yields to gentle pressure. It shouldn't be mushy, but not hard either! So give it a gentle squeeze and if it feels lightly soft, it's ready to use. Good avocados are key to making the even the best plain avocado toast recipe.
- Fresh Tomatoes - juicy tomatoes are a key ingredient in this recipe and you'll be using raw tomatoes so choose a variety you like the taste of! I like to use either heirloom tomatoes, Campari tomatoes, beefsteak tomatoes or smaller cherry tomatoes or grape tomatoes. I personally don't suggest using roma tomatoes because they are a bit less sweet and juicy.
- Sourdough Bread - you can use any type of bread you like! in my opinion, sourdough is the best bread for this recipe because it's a sturdy bread but has a delightful chewy texture when you bite into it. You can use whole grain bread, wheat bread, rye bread, or even white bread instead. Just make sure that you use a good bread - it's a key to making the best avocado toast.
- Fresh Basil - fresh basil is typically abundant at the same time as tomatoes so adding them on top of the slices of tomato is a delicious way to add more flavor. That said, it's totally optional! Basil has a slightly peppery, slightly sweet flavor. If you don't have basil, other fresh herbs or even dried herbs like basil or oregano work here.
- Extra-Virgin Olive Oil & Balsamic Vinegar Glaze - just a little bit of olive oil and drizzle of balsamic glaze take this avocado tomato toast to the next level.
- Lemon Juice - a little squeeze of lemon juice adds citric acid which helps brighten the flavor and color of the avocado to give it that beautiful bright green hue. It also adds some vitamin C! If you prefer, substitute with lime juice instead.
- Kosher Salt, Black Pepper, Garlic Powder- a pinch of salt, pepper, and garlic powder to tie everything together.
How to Make Avocado Tomato Toast
Below are the instructions for how to make this easy recipe with some visuals that I hope are helpful! Check the recipe card at the bottom of this post for the full recipe.
- Step 1: Remove the skin and pit from the avocado and slice your tomato. Mash the avocado in a small bowl. Add the lemon juice, salt, pepper, and garlic powder. Mix to combine.
- Step 2: Toast your bread of choice. Top the slices of bread with the avocado mixture and spread it evenly.
- Step 3: Add the sliced tomatoes on top of the avocado on each slice of toast.
- Step 4: Rough chop the basil and add it on top of the tomato slices. Drizzle olive oil and balsamic glaze on top. Finish it off with an extra squeeze of lemon and a little salt or flaky sea salt & black pepper.
Hint: if you prefer, you can use roasted tomatoes. To do so, slicing the tomatoes, add them to a baking sheet lined with parchment paper, top with a drizzle of olive oil & salt + pepper. Bake at 400℉ (200°C) for 20-25 minutes until roasted to your liking.

Variations
The best part about this Avocado Tomato Toast is that there are so many different ways to customize it to your taste preferences. Below are some examples, but feel free to get creative!
- Spicy - a great way to add a kick of spice it to top it with red pepper flakes.
- Sweet - add a drizzle of honey or maple syrup to make this delicious breakfast a bit sweeter!
- Deluxe - to add even more flavor and textures, top each piece of toast with diced red onion and goat cheese, feta cheese, or fresh mozzarella
- High Protein - add a layer of cottage cheese on top of the creamy avocado spread and top each thick tomato slice with a fried egg or 2.
Storage for Avocado Tomato Toast
- Refrigerator - store the leftover avocado mixture in the fridge in an airtight container for up to 3-4 days.
Expert Tips

They also contain dietary fiber for a healthy gut and important nutrients like vitamin C and potassium. Tomatoes contain a powerful antioxidant called lycopene, potassium, and vitamins A & K.
Choose a great avocado using these simple tips from Hass Avocado Board (HAB). Give it a gentle squeeze and if it is slightly soft, it is ready to use! You don't want it to be mushy and not hard, either. Ripe avocados will have a darker color but HAB recommends to go more by the feel AND color than the color alone.
There are many tomatoes that work for this recipe but my favorites are either heirloom or Campari tomatoes or smaller tomatoes like grape tomatoes or cherry tomatoes!

Quick Avocado Tomato Toast with Balsamic Glaze
Equipment
- 1 toaster
Ingredients
- 1 small avocado (or ½ large)
- 1 medium tomato (or 7-10 cherry tomatoes)
- 1-2 squeezes fresh lemon juice
- 1 pinch garlic powder
- 2 slices sourdough bread* (or your favorite bread)
- 2-3 leaves fresh basil
- drizzle extra virgin olive oil

- 1 pinch kosher salt & black pepper (to taste)
