Quick Avocado Tomato Toast with Balsamic Glaze

This Avocado Tomato Toast is perfect next time you have fresh tomatoes and are looking for simple recipes to use them up! It's a combination of creamy avocado and juicy tomatoes topped with fresh basil, a drizzle of olive oil & balsamic glaze.

Ingredients
  

  • 1 small avocado (or ½ large)
  • 1 medium tomato (or 7-10 cherry tomatoes)
  • 1-2 squeezes fresh lemon juice
  • 1 pinch garlic powder
  • 2 slices sourdough bread* (or your favorite bread)
  • 2-3 leaves fresh basil
  • drizzle extra virgin olive oil
  • drizzle balsamic glaze
  • 1 pinch kosher salt & black pepper (to taste)

Instructions
 

  • Remove the skin and pit from the avocado and slice your tomato. Mash the avocado in a small bowl. Add the lemon juice, salt, pepper, and garlic powder. Mix to combine.
  • Toast your bread of choice. Top the slices of bread with the avocado mixture and spread it evenly. 
  • Add the sliced tomatoes on top of the avocado on each slice of toast.
  • Rough chop the basil and add it on top of the tomato slices. Drizzle olive oil and balsamic glaze on top. Finish it off with an extra squeeze of lemon and a little salt or flaky sea salt & black pepper.
  • Hint: if you prefer, you can use roasted tomatoes. To do so, slicing the tomatoes, add them to a baking sheet lined with parchment paper, top with a drizzle of olive oil & salt + pepper. Bake at 400℉ (200°C) for 20-25 minutes until roasted to your liking.

Expert Tips
  • Use a tomato you like the taste of! Heirlooms, beefsteak, campari or cherry tomatoes are some of my favorites.
  • Mash the avocado first and then mix it with the other ingredients and add it to the toast. This helps give it a creamy texture and it can be hard to mash it on the toast without squishing your bread!
  • Use balsamic GLAZE which is different than balsamic vinegar. It's a reduction of balsamic vinegar and is thicker and has a sweet flavor. 
  • Be sure to use a ripe avocado. Check out the FAQs below for how to tell when it's good to use
Storage
  • Refrigerator - store the leftover avocado mixture in the fridge in an airtight container for up to 3-4 days.
