Easy Baked Sweet Potato Slices (Oven Roasted Recipe)

These Baked Sweet Potato Slices are so simple and make a delicious side dish! Here I share a basic recipe and 2 additional options - one savory and one sweet!

  • ½ teaspoon garlic powder
  • ½ tablespoon fresh thyme, leaves removed from stems
  • 1 teaspoon Italian seasoning

  • Preheat the oven to 425℉ (218°C). Spray a parchment-lined baking sheet or baking dish with cooking spray to prevent the sweet potato rounds from sticking. Give the sweet potatoes a good rinse. You can remove the skin if you want to, but I keep the skin on for more texture and dietary fiber. Slice the potato widthwise into thin pieces using a sharp knife. The size of your slices will be based on personal preference. Some people prefer thick rounds. I personally like mine a bit thinner. 
  • Pile the sliced sweet potatoes in the center of the prepared baking sheet. Top with olive oil, salt & black pepper, and other toppings. Using your hands, make sure each sweet potato slice is well coated on both sides. If you prefer, you can do this part in a large bowl.
  • Line the sweet potatoes in a single layer side by side. Be sure they are in a single layer so they cook evenly! Bake in the preheated oven for 30-40 minutes, flipping halfway through. Cooking time will vary depending on the size of your slices and your oven. The sweet potatoes are done cooking when they are a golden brown color. 
  • Hint: for best results, be sure to line the sweet potatoes in an even layer that don't overlap. You may need to do a couple of batches depending on how large your baking sheet or sheet pan is.

Expert Tips
  • Bake the sweet potato rounds in a single layer. You may need to do them in batches depending on the size of your baking sheet.
  • Flip the slices at the halfway mark, around 15-20 minutes.
  • Keep an eye on them in the last 5-10 minutes to make sure they don't burn!

  • Refrigerator - store leftovers in an airtight container in the fridge for up to 3-4 days.
