If you're a watermelon fan and you're looking to satisfy your sweet tooth without added sugar this summer, this 3 Ingredient Watermelon Strawberry Sorbet is perfect for you! Trust me -- the sweetness from the combination of watermelon and fresh strawberries with a squeeze of fresh lemon is everything you need on a hot day in the summertime!

Ingredients
  

  • 2 cups watermelon, cubed (340g)
  • 2 cups strawberries, sliced about 16 strawberries, (300g)
  • 1 lemon, juiced 2-3 tablespoon lemon juice (~30ml)

Instructions
 

  • Freeze your fruit by cutting the watermelon into cubes and halving the strawberries. Add them in a single layer to a baking sheet and put them in the freezer for at least 3-4 hours. *Watermelon has a high water content so it takes longer than some fruit to fully freeze.
  • Once the fruit is frozen, add the fresh lemon juice and frozen fruit to a food processor or blender. Blend until smooth, pushing down the sides as needed. It will take 3-5 minutes to blend.
  • Pour the mixture into a loaf pan or other freezer-safe container and freeze for another 45-60 minutes. Let the fruit thaw about 2-3 minutes before serving to make it easier to scoop.
  • Hint: to make this recipe even easier, use pre-cut watermelon and a bag of frozen strawberries.

Expert Tips
  • When freezing your fruit, line the baking sheet with parchment paper to make for easy clean up.
  • It takes a few minutes to blend, so be patient! If it's not moving, turn the blender off and push down the sides.
  • If you are using a small blender or food processor, you may need to do 2 batches of blending if it doesn't all fit
  • If it's too dry, add a bit more lemon juice or add some water. 
Storage
Freezer - This Strawberry Watermelon Sorbet should be stored in a freezer-safe container in the freezer and will stay good for up to 3 months. Be sure to cover your container with foil if it doesn't have a lid.
*The longer you store it in the freezer, the more likely it is to develop ice crystals so I recommend eating it within a month.
