Strawberry Chia Pudding, Creamy, 5 minute prep

Mallory
As a dietitian, I meal prep different chia puddings for breakfast all the time, and this Strawberry Chia Pudding is my favorite when strawberry season rolls around! It's a healthy breakfast that provides a balance of protein and fiber and only takes 5 minutes to prep. Blending some of the strawberries with milk and yogurt gives it a creamy texture that seriously tastes like a treat!

Expert Tips
  • Don't skip the double stir. After whisking in the chia seeds, let it sit about 10-15 minutes at room temperature and whisk it very well again before refrigerating.
  • Patience is key! Give it at least 4 hours in the fridge for the chia seeds to plump up to their full potential. Make it the night before and portion it into individual containers for a ready-to-go breakfast.
  • Give the strawberries a rough chop before blending with the milk and other ingredients.
Storage
  • Refrigerator - store in an airtight container in the fridge for up to 3-4 days.
If you want to store it in individual jars, here are some options:
