This Christmas Hummus Wreath is a great last-minute appetizer for the busy holiday season! All you need is hummus, veggies, a round platter, and a small bowl.
Start by preparing the bow that will go at the top of your hummus wreath. To make the bow, cut off the bottom of your red bell pepper and then cut the bottom in half. This will be the 2 sides of your bow. Cut 2 long slices of the pepper to make the ends of the bow and a small square to be the center of the bow. Set the components of the bow aside.
Place a small bowl in the center of a round platter to make the center of your wreath. Add large scoops of hummus around the bowl and use a rubber scraper or the flat side of a spoon to smooth out the hummus around the bowl into a wreath shape. Be sure to get the hummus up to the edge of the bowl.
Chop the cucumber, more of the bell pepper, and parsley. Add the chopped bell peppers, cucumbers, a sprinkle of feta cheese, and parsley on top of the hummus layer of the entire wreath. Place the cherry tomatoes around the wreath.
Arrange the bell pepper pieces into a bow at the top center of the finished wreath. Optional: add a drizzle of olive oil, squeeze of lemon juice, green onions and toasted pine nuts on top.
