Easy Green Goddess Dressing with Avocado (Creamy)

This Avocado Green Goddess Dressing is creamy, herb-packed, and made with nutritious ingredients like Greek yogurt, avocado, and fresh greens. It comes together in minutes and adds a pop of flavor and color to everything from salads and grain bowls to roasted vegetables and sheet pan dinners. It’s my favorite way to use up fresh herbs before they get forgotten and wilt into sad oblivion in the back of my fridge!

Equipment

Ingredients
  

  • 1 small avocado (or half medium avocado, 150g)
  • 1 cup plain greek yogurt
  • 1 cup fresh parsley, loosely packed
  • ½ cup fresh dill, loosely packed
  • ½ cup fresh mint, loosely packed
  • 1 cup baby spinach
  • 3-4 tablespoon lemon juice (about 1 large lemon)
  • 1 teaspoon extra virgin olive oil
  • 1 garlic clove
  • ½ teaspoon salt (more to taste)
  • pinch black pepper
  • 2-4 tablespoon water (to thin it to desired consistency)

Instructions
 

  • Slice the avocado in half and remove the skin and pit. Combine all ingredients in a blender or food processor. Blend until smooth, adding up to 1 tablespoon of cold water to thin it out if needed. 
  • Give it a taste and add more salt or lemon juice if you want.
  • Hint: If you're using it as a salad dressing, make it a little thinner by adding the bit of cold water. If you will be using it as a thicker dip, no need to thin it out!

Expert Advice
  • For best flavor, I suggest using fresh lemon juice instead of bottled lemon juice for this recipe if possible.
  • Be sure to use a ripe avocado. To tell if it's ripe, use these simple tips from Hass Avocado Board (HAB): give it a gentle squeeze and if it is slightly soft, it is ready to use! You don't want it to be mushy and not hard, either. Ripe avocados will have a darker color but HAB recommends to go more by the feel AND color than the color alone.
Storage
Refrigerator - store in an airtight container in the fridge for up to 4-5 days. To thin it back out, add a touch of olive oil or water and give it a stir.

Not only does making dressing at home taste amazingly fresh, it also gives you more control over the ingredients and the flavor.
