Creamy Elote Dressing (Mexican Street Corn Inspired)

This simple Creamy Elote Dressing is a unique take on the popular Mexican Street Food and is one of my favorite ways to add tons of flavor to an Elote corn salad or even pasta salad with sweet corn!
Hint: if you prefer a creamier dressing, add the ingredients to a blender or food processor and blend for about 30 seconds-1 minute.

Use full fat Greek yogurt for the creamiest consistency and non-fat Greek yogurt if you prefer a thinner consistency. Or add a bit of cold water or avocado oil to thin it out.
Add this dressing to your salad right before serving.
